Not tins, no dented aluminium; nor the kind found in the depths of a cupboard and saved for a harvest food hamper. We\u2019re talking plastic tubs with tasteful photography from the chilled section of a supermarket.&nbsp;<\/p>\n\n\n\n<p>\u201cEverything has to be logged before it gets put away,\u201d says Dawn Tattershall, a volunteer at the food cooperative in Griffithstown.<\/p>\n\n\n\n<p>The soup in question comes from <a href=\"https:\/\/fareshare.org.uk\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">Fare Share<\/a>, a scheme that distributes surplus food to food cooperatives, community-driven charities that fight hunger and tackle waste by creating discounted parcels for those in need.&nbsp;<\/p>\n\n\n\n<p>Dawn sorts through the boxes stacked around her. She and two volunteers are emptying the white van idling outside the shop on Windsor Road.&nbsp;<\/p>\n\n\n\n<p>\u201cWe charge \u00a34.00 for a bag of food and you\u2019re entitled to up to three,\u201d says Dawn, counting a stack of honey-cured ham like a deck of playing cards. The parcels are bulging; as much as can be squashed into a bag for life. There\u2019s easily \u00a325.00 worth of products in each one, enough to make meals for a few days. Dawn explains how the demand for the service is increasing now that the shop is on social media and more people know it exists. \u201cI think we gave out nearly 50 bags in a week once,\u201d she says.&nbsp;<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\"><p><strong>\u201cAdd the rising cost of living, mix with wage stagnation and you have a recipe for crisis.\u201d<\/strong><\/p><\/blockquote>\n\n\n\n<p>Dawn says that last week, they received a box of feta cheese among other things in their delivery. \u201cWe had mushrooms, turkey rashers, sausages, chicken, steaks\u2026\u201d It\u2019s not the processed goods many expect from a food cooperative.&nbsp;<\/p>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" width=\"800\" height=\"534\" src=\"https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Food-Cooperative-Back-Room_Main-Body_CD.jpg\" alt=\"Food Cooperative Store Room\" class=\"wp-image-52715\" srcset=\"https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Food-Cooperative-Back-Room_Main-Body_CD.jpg 800w, https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Food-Cooperative-Back-Room_Main-Body_CD-467x312.jpg 467w, https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Food-Cooperative-Back-Room_Main-Body_CD-768x513.jpg 768w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><figcaption>In a survey given to customers of Gem in Association with Women in Need, 80% cited the current cost of living as the cause behind their experiences with food insecurity and a further 30% said it was a combination of benefit changes, unemployment, rising living costs and the lack of free meals during school holidays.<\/figcaption><\/figure>\n\n\n\n<figure class=\"wp-block-image\"><img loading=\"lazy\" width=\"800\" height=\"534\" src=\"https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Dawn-Tattershall_Main-Body_CD.jpg\" alt=\"Elderly Volunteer\" class=\"wp-image-52714\" srcset=\"https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Dawn-Tattershall_Main-Body_CD.jpg 800w, https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Dawn-Tattershall_Main-Body_CD-467x312.jpg 467w, https:\/\/www.jomec.co.uk\/altcardiff\/wp-content\/uploads\/2019\/12\/Dawn-Tattershall_Main-Body_CD-768x513.jpg 768w\" sizes=\"(max-width: 800px) 100vw, 800px\" \/><figcaption>\u201cI broke my elbow last year and they helped me out with food,\u201d says Dawn, the volunteer charged with logging the food delivery. \u201cI wanted to give something back.\u201d<\/figcaption><\/figure>\n\n\n\n<h2><strong>A country in crisis<\/strong><\/h2>\n\n\n\n<p>In the United Kingdom, the number of people receiving food aid has grown by <a rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\" href=\"https:\/\/www.trusselltrust.org\/2019\/04\/25\/record-1-6m-food-bank-parcels\/\" target=\"_blank\">73%<\/a> in five years. In Wales, <a rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\" href=\"https:\/\/www.trusselltrust.org\/news-and-blog\/latest-stats\/end-year-stats\/\" target=\"_blank\">113,373<\/a> emergency food parcels were distributed between 2018-19 and according to a recent <a href=\"https:\/\/www.sustainweb.org\/resources\/files\/reports\/SWFPA%20Food%20Poverty%20A%20Call%20to%20Action%20Feb%202019.pdf\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">report<\/a>, a fifth of the population worry about food insecurity.&nbsp;<\/p>\n\n\n\n<p>Largely, food poverty is a result of changes to welfare. Add the rising cost of living, mix with wage stagnation and you have a recipe for crisis.&nbsp;<\/p>\n\n\n\n<p>Emma Revie, chief executive of the Trussell Trust \u2013 a charity aiming to end hunger with the largest national network of food banks \u2013 <a href=\"https:\/\/www.trusselltrust.org\/2019\/11\/05\/state-of-hunger-2019\/\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">says<\/a>, \u201cPeople are being locked into extreme poverty and pushed to the doors of food banks. Hunger isn\u2019t about food. People are trying to get by on \u00a350.00 a week and that\u2019s not enough for the essentials.\u201d<\/p>\n\n\n\n<p>Essentials are defined as things that are absolutely necessary. These differ; one man\u2019s bread is another\u2019s brioche. However, according to nutritionist Jayne Davis, we all need a balanced mix of protein, carbohydrates, fats and micronutrients in order to maintain a healthy diet.&nbsp;<\/p>\n\n\n\n<p>\u201cIt\u2019s recommended that individuals follow the <a href=\"https:\/\/assets.publishing.service.gov.uk\/government\/uploads\/system\/uploads\/attachment_data\/file\/528193\/Eatwell_guide_colour.pdf\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">Eatwell Guide<\/a>,\u201d says Jayne. This is a government-produced visual representation of the food groups. \u201cChoosing a variety of foods from each group will allow us to achieve the range of nutrients our bodies require to stay healthy and function correctly.\u201d <\/p>\n\n\n\n<p>When the choice is heating or eating, what becomes essential?<\/p>\n\n\n\n<h2><strong>Feeding those in need<\/strong><\/h2>\n\n\n\n<p>Typically, an <a rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\" href=\"https:\/\/www.trusselltrust.org\/get-help\/emergency-food\/food-parcel\/\" target=\"_blank\">emergency food parcel<\/a> consists of non-perishables. Food cooperatives differ \u2013 think of it like a surplus food subscription; cooperatives pay <a href=\"https:\/\/www.jomec.co.uk\/altcardiff\/no-logo\/fareshare-and-tesco-to-fight-food-poverty\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">redistribution charities<\/a> a fee who then provide excess produce donated by supermarkets.<\/p>\n\n\n\n<p>\u201cIt comes down to the supply and suppliers,\u201d Paula Cotton, owner of the cooperative, says around an armful of pasta sauce. \u201cThey can only give what they get. It\u2019s hard, people can\u2019t pick and choose but they\u2019re grateful.\u201d<\/p>\n\n\n\n<p>Paula puts down the crate. Bolognese, from the look of it. \u201cWhatever we get, we try and give a variety,\u201d she explains. These are typically more nutritious than processed goods which are high in salt, sugar and saturated fat.<\/figcaption><\/figure>\n\n\n\n<p>\u201cOne of the most notable benefits of consuming a balanced diet is its effect on our energy levels,\u201d says Jayne. \u201cIf we don\u2019t consume the appropriate nutrients throughout the day, it can leave us feeling lethargic.\u201d&nbsp;<\/p>\n\n\n\n<blockquote class=\"wp-block-quote\"><p><strong>\u201cThis means that a healthy diet costs \u00a3103.00 per week for a family of four.\u201d<\/strong><\/p><\/blockquote>\n\n\n\n<p>Yet, for those experiencing food insecurity, nutrition is of least concern with 70% of customers at the food cooperative agreeing that keeping costs low was a priority when buying groceries. A consistent diet of quality, nutrient-rich fresh foods is unattainable when relying on food banks as they, unlike the cooperative, are unable to store perishables.&nbsp;<\/p>\n\n\n\n<p>\u201cThey\u2019re not given the choice, it\u2019s snatched away,\u201d says Paula, shaking her head.&nbsp;<\/p>\n\n\n\n<p>If you <a href=\"https:\/\/foodfoundation.org.uk\/wp-content\/uploads\/2018\/09\/Affordability-of-the-Eatwell-Guide_Final_EMBARGOED-Version.pdf\" target=\"_blank\" rel=\"noreferrer noopener\" aria-label=\" (opens in a new tab)\">compare<\/a> the cost of following the Eatwell Guide with average household incomes in Wales, the bottom 20% of families would need to spend 36% of that income on food. This means that a healthy diet costs \u00a3103.00 per week for a family of four.<\/p>\n\n\n\n<p>One customer of the cooperative, a mother of two, speaks of the struggle to cook tasty meals on a food bank diet. She says, \u201cWe were grateful, obviously. It was better than nothing which was all I could afford at the time. I like coming here though because I love the variety of items. It\u2019s much easier to make meals and I feel like what we get is healthy because a lot of it&#8217;s fresh.\u201d<\/p>\n\n\n\n<h2><strong>Combating food insecurity<\/strong><\/h2>\n\n\n\n<p>Although not perfect, food banks and cooperatives ease the strain of food insecurity and do their best to ensure those in need receive healthy options when possible.<\/p>\n\n\n\n<p>\u201cWe try,\u201d says Paula. \u201cIt\u2019s not always the best option. We try.\u201d She reaches around Dawn, organising the chicken soup into a tower before unboxing several packets of chilled minced meat.<\/p>\n\n\n\n<p>\u201cEverybody\u2019s got a need,\u201d Paula finishes. \u201cYou know, working or not, people are still struggling.\u201d She shrugs. \u201cThanks, government.\u201d<\/p>\n\n\n\n<figure class=\"wp-block-embed-youtube wp-block-embed is-type-video
